Combine Three Spirit Nightcap and other ingredients in an ice-filled cocktail shaker or jam jar.
Shake hard and strain into an ice-filled whisky tumbler.
*Fresh ginger syrup
- 200g ginger
- 50g water
Blend until a pulp and squeeze through a tea towel until no juice remains.
Weigh this liquid and add an equal weight of white sugar.
**Smoky ginger honey
- 200g set honey
- 200g water
- 100g peeled and diced ginger
Bring to a boil, cover and very gently simmer for 10 minutes.
Leave to cool to room temperature and add 50ml heavily peated whisky.
Strain out ginger.
